I have tested a SharePoint Portal demo and don't see enough value in it to
justify the cost. I would like to remove it and just use SharePoint
Services, but I would like to retain the work I've already done. I have a
Portal site containing around ten SharePoint Services sites.

What is the proper way (if there is a way) to uninstall just the Portal site
and services while guaranteeing I won't lose the ten SharePoint Services
sites?

You can use FrontPage 2003 to backup each site since you don't have a lot of
sites. Then simply restore them when you get your WSS install up and
running. Since WSS is the underlying Portal Server technology I am not sure
you can seperate them successfully and continue to use WSS.
